The Old Fashioned is the oldest cocktail still in regular rotation, and it is the truest test of a bar. There is nowhere to hide behind only four ingredients.

Ours starts with a bourbon we choose specifically for cocktails — enough backbone to stand up to sweetness and ice. We use demerara syrup instead of a sugar cube for a rounder, molasses-like sweetness, and a mix of aromatic bitters.

The secret is not an ingredient at all — it is dilution and temperature. We stir, not shake, and we take our time. A great Old Fashioned should be cold, silky, and balanced.
